At a restaurant, how could you choose one out of three desserts with equal probability with the help of a coin?

Toss the coin twice. 

Let Tails-Heads, Heads-Tails and Tails-Tails correspond to the three choices. (so tails-heads = cookies, heads-tails = ice cream, tails-tails = brownie)

So, first time I flip the coin I get tails. So I know my choices are now cookies or brownies. Once I flip again I get heads. So the dessert will be cookies!)

And if you get Heads-Heads, just repeat the toss.
