How steep does a roof have to
be to be considered “pitched”?

The roof's pitch is the ratio of vertical rise  to the horizontal span. it is also known as slope in mathematics. The steeper the roof, it will be difficult to install roofing, therefore steeper pitched roofs are not much preferred. Nomally considered roof pitch are 6/12 , 8/12, 10/12 

Pitch of the roof must be selected in such a way that a person can walk over the roof if required. Pitches over 9/12 cannot be walked without help of boards attached to the roof deck
