Each one of these methods is slightly different. Datasheet view allows you to see and manage your data. This includes adding, editing and viewing all your data. However, you cannot change the features of the database (such as add or remove fields and other database objects).
Design view on the other hand, allows you to add and remove fields, alter database objects, but a disadvantaged is that you cannot add or remove data entries.
It is difficult to choose a preference, as both have their different utilities. In the process of creating a database, I prefer to start with the design view, so that I can create all the fields, but once I do have to input data, I would switch to datasheet view.
