Amylase is an enzyme mostly produced by the salivary glands and the pancreas. Amylase breaks down starch.   Laboratories [2] classify amylase as normal when they obtain  23 to 85 units per liter. Nevertheless, other laboratories [2] classify amylase as normal when they obtain 40 to 140 units per liter. The blood amylase test is used to diagnose pancreatitis, pancreatic cancer,  and other related disorders, when the laboratories obtain abnormal levels of this enzyme.
