Introduction

The world has and continues to undergo a rapid epidemiological and nutritional
transition. The transition has witnessed the introduction of some of the conditions into human
lives as witnessed by the prevalence of anaemia, stunting, and obesity. Childhood obesity
affects the developed world as witnessed by its reach to epidemic levels. Even though the
developed countries have experienced high prevalence rates of obesity, its prevalence
continues to rise in developing countries as well. The inherent hormonal differences between
males and females mean that the likelihood of females developing obesity is more when
compared to males (Lytle, 2009). Childhood obesity has grown globally to be one of the most
severe public health issues in the twenty-first century.
Literature Review
The dietary changes observed in most of the schools reflect the overall trends on the
types of foods that most people favour. In the United States, for example, trends on the
consumption of some of the foods such as carbonated beverages and other foods with high
calories and fats have increased while the consumption of foods such as milk and vegetables
have decreased. The witnessed shifts in food intake in the United States have contributed to
the changes in the types of food thus affecting the nutrient intake of children. There is also a
shift in macronutrient distribution within the diet in the United States particularly diets
involving carbohydrates (Koplan et al, 2005). Data from American trends show an increase in
the percent of energy from carbohydrates and a decrease in the percentage of energy from
protein and fat.
