Your Name General Information Sample Cherry Street Coffee House Location: 1223 E Cherry street Seattle WA 98122 Time Visited: 12:30pm-1;55pm on 11/13/2018 Cherry Street Coffee is a multi-regional chain coffee café. It is a family owned business that has been around since 1977. The company emphasizes quality, by freshly baking pastries and making soup from scratch every morning. They have 12 different locations around the Seattle area. Customers and employees were roughly between the age of 20 to 30 years old. • Servicescape Ambient Conditions: As I entered the café I noticed that the entrance door stays open, providing a nice fresh breeze from outside. Although the door is open, the temperature is still nicely balance. It is neither cold or hot making it okay to walk around with just a shirt as well as a jacket. The air quality is ideal, as there is no indication of pollution. The noise levels are balanced, anyone could come in and do work just fine without experiencing distractions from noise. Music at the location is diverse and consist of modern hip hop, R &B, and country. The smell is quite soothing, you can smell a mixture of coffee, pastries, and sandwiches. • Space/Function: At each location Cherry street coffee is designed differently. When you walk into this location you will immediately notice that the cash register is roughly 5 feet in front of the entrance and the ceiling are really high. This causes the customers to perceive that the café is a lot bigger than what it is. on the left side there is one long table with several chairs and a few small tables with chairs surrounding it . There is an a large beam close to the long table that doesn’t get in peoples way. There is also a bench and long table with bar stools by the entrance where customers can look onto the street. There is also a wall that kind of separates the tables from the kitchen and bathroom. On the other side there are several small tables close to the window. The layout of this location is designed so that the service area and kitchen are in the middle of the store and everything else surrounds it. • Signs/Symbols/Artifacts: There is a sign right outside the café is the company logo that says, "Cherry Street Coffee House" .It is on the corner of a building complex. The logo has green and red which captures any potential customers eye. Inside there Isn't much advertisement of deals, however there appears to be some sort of frog like statue on top. There is also, several pieces of art that fit well with the wood like walls. Everything inside blends well nothing stand out too much, I assume this must be the owners way of letting the customer enjoy the experience. The colors used consist of green and brown, which give off this earthy eco-friendly feel. The canvass used were patterned based which were interesting and Customers Queue • unique. Some of walls used wood like material that can be seen in Picture 3. By the cash register there are several plants that provides some greenery. The customers coming in for the most part were students that probably went to Seattle University. Many were there to drink a cup of coffee and do homework. The students who entered were very friendly with the employees. Students seemed happy and excited to order their food item. Some students even appeared to know some of the employees, which I assumed must mean they come to this location very often. The students were very friendly with other customers as well, having small conversations with one another while they waited in line to order. Employees delivered food to customers with smiles on their faces and were not in a rush to move on to the next order. Employees were very helpful to customers who seemed torn between what to order. They often made suggestions which customers appeared pleased about. Queuing model: The café uses a single server/single stage queuing system. Since there is only one register customers are forced to wait in one line in order to place their orders. As you can see in Picture 1 there is an iPad in which the employee and customer both interact with the system. Once the employee processes the order he/she will turn the iPad to the customer so they can finish the payment process. • Longest queue: Between the time of 12:30 pm till 1:55 pm there was relatively 30-40 people who entered the store. The longest queue time was about 6 minutes and it was for a party of 2 who ordered a rice bowl and some coffees. However, typically the queue time appeared to be about 2-3 minutes. • Circumstances: Earlier that day it had been raining and pretty cloudy, but not too cold outside. When I visited around 12:30 pm the café was kind of empty. Since this café is right by Seattle University, a lot of business comes from students. A lot of students are in class at this time so that affects the amount of customers they see. Before 1 pm I noticed the queue times were the lowest which would reflect the fact that the café wasn’t that busy. As it got closer to 2 pm I noticed that there was a lot more customers and employees seemed a busier. This is when I noticed queue time becoming slightly longer. Also, more customers were ordering food around this time then drinks. This could be an indication that the customers coming in close to 2 pm were probably on the lunch breaks because they were older looking. Street Bean Coffee Roasters is a non-profit company organization, a community-oriented
cafe that employs and trains the youth in Seattle trying to leave vagrancy. Street Bean offers
a paid multi-month apprenticeship to enable destitute youth to pick up business aptitudes to
gain long-term feasible work and lodging to leave road life. Established in 2009, Street Bean
not just trains destitute and in any case dislodged and burdened youthful grown-ups to work
in a coffeehouse that offers pour-over and coffee, yet additionally offers food and lodging in
a safe house situated over the bistro. Through joint effort with the 37-year-old religious New

Visiting Street Bean Coffee Roasters in Seattle was a good idea, and as I entered the bistro,
I saw that the passage entryway remains open, giving a decent new breeze from outside.
Even though the entryway is open, the temperature is still pleasantly balanced. It is neither
cold nor hot, making it alright to stroll around with only a shirt just as a coat.
