Your Scenario You are a chemical engineer at Pepper's Hot Sauce Company in Dallas, Texas. Marketing has asked for a formula improvement to its existing hot sauce, the Viking Inferno. The new sauce will be called Take no Prisoners. Marketing would like this new sauce to be hotter than any of the competition. You must provide the following information: 1. Test the existing Viking Inferno sauce for pungency using the Scoville Scale* in Scoville Heat Units (SHU). 2. Test two competitors’ sauce of your choice, using the same scale. Introduction
Pungency is the heat found in chili peppers. It is the condition of strong, sharp smell and
taste. The group of compounds that produce the heat are called capsaicinoids. The alkaloid in
peppers that produce the heat is called capsaicin. The degree of hotness of the pepper is
determined by capsaicin concentration. Hereditary and environmental factors determine the
capsaicin amount in the pepper. In most cases it is considered that the seeds produce the heat in
the peppers. It is also known that the seeds do not cause heat when they are hot. The heat is
stored in the placenta membrane and is not stored in seed but only transferred to them (ChezWilliams, 2017). It is also described as the spices king. The heat sensation in mouth is
transmitted by the mouth pain receptors in collaboration with a neurotransmitter. This leads to
runny nose and eyes become watery. Endorphins released by capsaicin lead to exhalation feeling.
Background
In this world, there is very high competition. Everyday new things are being innovated
