Your Scenario
You are a chemical engineer at Pepper's Hot Sauce Company
in Dallas, Texas.
Marketing has asked for a formula improvement to its existing
hot sauce, the Viking Inferno.
The new sauce will be called Take no Prisoners. Marketing
would like this new sauce to be hotter than any of the
competition. You must provide the following information:
1. Test the existing Viking Inferno sauce for pungency using
the Scoville Scale* in Scoville Heat Units (SHU).
2. Test two competitors’ sauce of your choice, using
the same scale. (Such as “Original” Beer Barrel
Embalming Fluid”.
* The Scoville scale is a measurement of the
pungency (spicy heat) of chili peppers-
such as the jalapeño, the bhut jolokia, and
the world's current hottest pepper, the Carolina Reaper-
or other spicy foods as reported in Scoville heat units
(SHU), a function of capsaicin concentration.

You have compiled the following information and must present
it in a lab report with tables and pictures. You include research
you have found from competitors also.
1. You have created a list of the hottest peppers known to man
for consideration in your formula for Take No Prisoners
(See Table 1). You will select three of these to use in the
Take No Prisoners formula, showing the Scoville rating.
2. You have created a table comparing two of your largest
competitors to the old Viking Inferno formula, and the new
Take No Prisoners formula. The table includes current
Scoville rating, price per bottle, and number of bottles
sold worldwide.
3. You suggest the warning label to be used on the bottle of
Take No Prisoners.

The Red Savina pepper, one of the hottest chilis, is
rated at around 500,000 Scoville units.
The bhut jolokia (ghost pepper) is rated at over one
million Scoville units. It is primarily found in the
Northeast Indian states of Assam, Nagaland, and
Manipur.
