Living on $5/day to Understand Food Insecurity Learning Outcomes: At the conclusion of this exercise, students will be able to: • Plan a nutritious diet when constrained by a very limited budget • Keep a food journal for three days, detailing intake as well as physical, emotional, and mental consequences • Discuss the nutrition status implications of feeding oneself on a limited budget Audience or Settings: Students who cannot complete this activity for health reasons or other limiting circumstances should ask ASAP about an alternative assignment to complete virtually.
