Albinism is lethal in plants, but many plants produce albino offspring. If albino plants always die before reproducing, how does albinism persist?

Albinism is inherited as a recessive gene and thus only plants which have two recessive genes have the ability to express albinism phenotypically. These are the ones which die before reproducing. Some healthy plants carry the albinism gene, and being recessive, they do not express it and are thus able to transmit the gene to the next generation. This way, albinism persists.
