Definition of "Authenticity" in Food
The word authenticity is commonly used in food to mean that the food is of good
quality or is what it purports to be. In other words, authenticity in food talks about the value of
the food. Food authenticity helps consumers obtain what they pay for and enhance their general
trust level regarding food. Grundy et al. (2012) describes food authenticity as a food that is not
copied but genuine and real. This means that the originality of such foods is supported by
unquestionable evidence, verified and authentic documents traced back to the Middle Ages.
According Primrose, Woolfe and Rollinson (2010) it is essential to mind the authenticity
of food even if doing so is a challenging endeavor. This is because one cannot be able to
determine the authenticity of food that they consume out there. The authenticity of food is
compromised from the time of growing these foods to the process of preparing it. Doubtlessly,
the best way to get authentic food is to go to the actual place where it comes from. This is
because food authenticity is made by the soil, water, air, among other elements that cannot be
transferred somewhere else.
Lastly, most people think that food authenticity is fostered by grandmothers and
restaurants that employ grandmothers to prepare dishes, but this is not the case, since some
grandmothers add artificial spices to their dishes. Food authenticity can only be achieved if
people can focus on growing original foods and using local foods that grow under local
conditions such as weather and soil. Moreover, focusing on preparing cuisine is a good way of
ensuring food authenticity. The issue of GMO directly affects food authenticity, the big question
being whether GMO food qualifies as authentic foods.
