Introduction and Theory Fungal contamination has been a recurrent problem in some foods such as bread. The presence of molds in thermos-processed products indicates either unacceptable raw ingredient quality or poor sanitary conditions. Fungal antigens have been detected by immunological methods, such as precipitin tests especially in medical diagnosis. However, different type of molds have unique physical characteristics. These characteristics are defined by color, shape, smell, size and texture of the mold (Tulbek, 2010). Molds are the common name for a group of fungi that is mainly characterized by various factors such as hyphae, which combine together to form mycelia, and interwoven visible bodies that resemble cotton. Mold belongs to a group of micro fungus family, which naturally occur in nature. Mold development and growth is mainly triggered by two conditions: a food source and also enough moisture (Ramanujam, 2004). Mold is an important part of the ecosystem which plays an important role in the environment. Certain molds are harmful to human beings and hence they can provoke infections and diseases.
