Hi,
I beg to disagree with menu 2 because of the choice of the alcoholic beverage. Choosing sweet
rose wine which has tannin will cancel out the fattiness of the salmon leaving the diners with
residual fish flavor. In this case, I recommend sweet white which blends well with fish
delicacies.
I do agree with menu 1 for the choice of perfect accompanying white wine that matches with
t6he intensity of light fish flavor or chicken. For sweet desserts, it was perfect to match them
with some bitter wine.
