You get to design your dream
kitchen. Not the one in your home however, the one in the restaurant you
manage.
Go through the planning process outlined in chapter 12. Be sure to include
design factors and design and describe (or graphically show) your layout. Be
sure to take work flow and volume into account.
Wrap it up with your equipment selection. Make sure you include the different
types of equipment you will need. Include pictures, if you like.
Focus on the design factors of the kitchen for
your workers.
Also decide on whether you
would use an L shaped layout, straight line layout, or a U shaped layout.
