The safety of food products is very important to ensure that the health of individuals that
consume the products is not at risk. Numerous pathogens can contaminate food during the stages
of processing. In this easy, the microbe Brucella will be discussed showing how it infects
particular food products and the effects it has on humans who ingest it.
Brucella is a species of bacteria that is found in cattle, sheep, dogs, goats, and pigs. Currently,
there are four types of species that have been found to cause disease in man. The species are
Brucella suis found in pigs, Brucella melitensis found in goats and sheep, Brucella canis found in
dogs and Brucella arbutus which is found in cattle (Franco, Mulder, Gilman, & Smits, 2012).
The Brucella microorganisms are facultative intracellular pathogens. They are gram-negative
coccobacilli that are non-motile and do not form spores. Brucella melitensis is the most virulent
species hence causes more serious disease in humans. The animals that carry the Brucella
bacteria can also be infected by it leading to disease.
Transmission of Brucella mostly occurs to farmers who handle infected animals on the farm.
The infection occurring on the farm is mainly via close contact with secretions from infected
animals. Contact with broken skin of cattle or goats that are infected can easily result in infection
to a farmer. Infection can also occur through taking unpasteurized milk.
During the processing of food, there is a likelihood of Brucella contamination which may lead
to mass infection of brucellosis. The contamination mainly occurs if the pasteurization process of
milk is not done properly (Franco, Mulder, Gilman, & Smits, 2012). Pasteurization is important
